OK, let’s get real. This time of year it’s about focusing on health, not indulgence. And as much as some people out there would like to cultivate the fantasy that every morning involves either some sort of breakfast casserole or stack o’ pancakes, the truth is we girls on the go need a reliable breakfast that is quick, easy, healthy, and filling.
I don’t have time to make oatmeal from scratch (and the instant stuff is too yuck for me). As much as I love eggs, and eat both the yellows and the whites, I don’t have time or inclination to eat them every day, either. So I’m about to reveal my most trusty, reliable breakfast, that not only keeps me full until lunch, but has, I think, helped me lose some weight this past year, too (along with all the running and riding!).
Here it is: yogurt with nuts. The variations are endless. But the basic recipe is one container of Stonyfield organic yogurt with the lid off, topped with a handful of walnuts. (I also like Wallaby organic yogurt, and slivered almonds, too.) That’s it! Without the nuts, I don’t feel full. But nuts alone just aren’t enough, and are kind of dry and boring. You don’t even need to dirty a bowl if you don’t want to—just open the container and throw the nuts on top.
Sometimes, if I am feeling the need for something a bit more fancy, I go for one of my special variations:
Banana-Maple Parfait
Ingredients:
- 1 single serving container yogurt (I like Stonyfield’s plain Oikos Greek yogurt)
- 1 banana, sliced
- 3 Tablespoons walnuts
- 2 Tablespoons maple syrup
Directions:
Mix together and enjoy!
Almost Apple Pie Parfait
Ingredients:
- 1 single-serving container of yogurt (I like Stonyfield’s plain Oikos Greek yogurt)
- 1/3 cup applesauce
- 3 Tablespoons walnuts
- 2 Tablespoons maple syrup
Directions:
Stir together and eat. It’s better than pie!

I eat Wallaby yogurt too. Instead of nuts I put about 1 Tablespoon or more of ground flax seed in the top of my yogurt cup. It’s so good and very filling. All of the good stuff in the yogurt and flax seeds plus the fiber makes me feel great!! Thanks for your post 🙂

I rely on organic dry cereal (a cinnamon crunchy variety) with a sliced organic apple and, as a treat, sometimes I’ll add a few pecans. On school days, my 9 year old son relies on Van’s organic blueberry waffles with peanut butter to hold him over until lunchtime.
Ditto!! I eat the exact same thing. Sometimes I add a tablespoonful of ground flax seed and pepitas. Excellent tasting and healthy to boot. Love Wallaby Yoghurts, Stonyfield, Oikos, and Fage organic yoghurts too! All fat free or low fat. Every now and then I’ll indulge in full fat yoghurts.
No better way to eat when you are on the go.
Okay Maria — I love your breakfast too but add a drizzle or more of honey and chunks of granny smith apples — sweet and tart & creamy and crunchy!
Great breakfast ideas! One of my favorites is organic frozen whole grain waffles and Morningstar Farms veggie sausage patties drizzled with agave nectar. If I have some berries or cherries in the house, even better.

I also eat the stonyfeild yogurt with flaxseed and maple syrup, or with rasberryies or blackberrys, and then I skip the syrup. I buy the plain and add the good stuff, great breakfast when your in a hurry.
ha- I thought I was alone in doing this! My very favorite topping for Greek yogurt breakfast is a sprinkling of whatever dry whole grain cereal I have opened, a few berries and yes, walnuts!
